Paul McMahon is Catalina's Executive Chef. His fresh and authentic menus are inspired by the classics - French, Italian, Spanish and Mediterranean. Seafood is a Catalina specialty. Oysters are shucked to order, and long-standing relationships with Sydney's leading suppliers provide him with the best line-caught fish. Paul’s menu reflects his love of the food of Spain and Italy, translated into a distinctly Australian style, using premium seafood, meats and poultry from around Australia.
In addition to Paul's menu, Master Sushi Chef Yoshi Fuchigami produces standout Sushi and Sashimi Wednesday through to Sunday.
