Renowned chef of Sydney’s Aria Restaurant, Matt Moran, is making sure every cup counts in the fight against cancer by sharing his carrot cake recipe with supporters of Australia’s Biggest Morning Tea.
Australia’s Biggest Morning Tea is one of Cancer Council’s leading fundraising events to help reduce the impact of cancer in the community through research, prevention and support and education services. It also gives supporters, their friends and colleagues an opportunity to get together and support loved ones affected by cancer.
More than 1 million Australians will come together in offices, homes, schools and community centres to help the fight against cancer all throughout May (and even June), culminating on the ‘official’ day of 26 May.
MATT MORAN’S CARROT CAKE RECIPE
Ingredients
190 g plain flour
75 g self-raising flour
1 tsp bicarbonate soda
1 tsp mixed spice powder
1 tsp ground cinnamon
40 g sultanas
400 g carrots, finely grated
90 g whole walnuts, chopped into small pieces
400 g bananas, mashed
200 g brown sugar
230 ml grape seed oil
3 eggs
300 g cream cheese
1 vanilla bean, split and seeds scraped
70 g icing mixture
Method
To prepare the cake, first sieve together all the dry ingredients, (i.e. plain flour, SR flour, bicarb, mixed spice and ground cinnamon) except the icing sugar, into a bowl. Add the sultanas, grated carrot, chopped walnuts, mashed banana and brown sugar. Mix in the eggs and grape seed oil and beat together to form a batter.
Lightly grease and line with baking paper a baking tray that is 25cm by 35cm. Pour the cake batter into the baking tray. Bake the cake in a pre-heated oven at 180?C for 20-25 minutes.
Turn out the cake onto a cooling rack.
To prepare the cream cheese icing, beat the cream cheese in a bowl until smooth. Scrape the vanilla seeds from the pod and add to the smooth cream cheese. Sieve the icing sugar into the cream cheese and mix together.
When the cake is cold spread the cream cheese on the top of the cake. Cut the cake into slices and serve with a nice cup of tea.
