Joseph Vargetto served his apprenticeship at Melbourne’s Florentino Restaurant. He then worked in Northern Italy at three-star Michelin restaurant Gaultiero Marchesi. In Australia he worked at Langton’s with Philippe Mouchel and later Jeremy Strode, and prior to now was at Crown as executive sous chef in charge of 15 different restaurants and 250 chefs. He has achieved many awards including the prestigious ‘Bocuse dor’ as Australia’s representative in France in 2001, and only the year before was named the Best Risotto Maker in Australia by Antonio Carluccio.
Joseph's passion for seasonal produce, honest flavours, generosity and conviviality was presented in Oyster Little Bourke, but has only had the opportunity to flourish since reopening as Mezzo Bar + Grill.
