Lotus head chef, Dan Hong fine-tuned his craft at Longrain, Pello and Marque before moving to Tetsuya’s as a qualified chef. In 2006, Dan was appointed sous chef at Bentley Bar. He also won the Josephine Pignolet Best Young Chef Award at the 2008 SMH Good Food Guide Awards.
